As we look to further share the Modus Operandi Wines with you, this week's flight will feature FOUR wines the 'Vicarious' series that score particularly well on the quality to price scale.

 

The tasting flight is $28 and starts tonight at both locations.

Also, I would be remised if I did not take a moment to introduce our newest addition to the team, Coleman Pedigo!

 

Coleman is a Charlotte native that comes to us with a passion for wine and with a theater background! Coleman received his BA in Acting & Music from the conservatory at Trinity College in Dublin, Ireland. Coleman comes to us with a great service background in fine wine. His undeniable fascination with wine and gregarious personality made him a brilliant addition to the team. If you see him in the tasting room, please don't be a stranger. I'm sure he'll extend a warm greeting and smile when he makes your acquaintance! Welcome Coleman.

Modus Operandi Cellars

Modus Operandi Cellars is run by Jason Moore, a Texas transplant to the Napa Valley.

Jason worked for several years in the restaurant industry waiting tables at fine establishments while living in Dallas. Jason would wait tables by night and sell real estate by day. Ambitions of going on to a successful career in real estate were slowly squelched when he realized this was something that he was just not passionate about. Racking his brain for a career that would combine “fun” and education with something he was already passionate about clicked one day when his wife said “how about doing something with wine”.

 

This seriously hit home and within months they had sold most everything they owned and moved to Davis, California with the possible intent of attending UC Davis (prominent enology and viticulture programs) down the line. While in Davis he started to learn as much about wine as possible by immersing himself in wine making books, talking to other UC Davis enology and viticulture students and those in the industry. Being a hands on guy and describing winemaking as “art supported by science” he eventually decided he needed to get some hands on experience.

What turned into a fortuitous event occurred at a wine tasting. He met a Napa vineyard owner who had bought a piece of land for a vacation home which happened to have a sizable vineyard. At the tasting, this gentleman told Jason about his vineyard and that he knew next to nothing about vineyard management and winemaking. Jason asked if it would be ok if he took his second crop and the reply came back that he could have the entire first crop.

Those were extremely long days in Napa (while still commuting between Davis) – besides his job at La Toque and his own wine making project he was also on the winemaking team at Viader where he furthered his winemaking experience.

Modus Operandi

Sauvignon Blanc 2021

Napa Valley, CA

$47 btl/retail

Only 10 barrels of this exotic, and unique Sauvignon Blanc from Jason Moore were produced... some have claimed it as one of the best in the Valley.

Varietal: 100% Sauvignon Blanc.

Taste: Intensely aromatic and has a lush and rich texture. Exploding with exotic tropical fruit on the nose that translates to the palate and finishes long for a SV.

Pairing Suggestion: The perfect start to an evening of light appetizers while dinner is prepped. Can be enjoyed with a variety of dishes given the striking balance between the more grassy New Zealand styled SVs and the Napa more fruit forward versions.

Modus Operandi Vicarious

Chardonnay 2019

Sonoma Coast, CA

$39 btl/retail

Classic soft new world Chardonnay that on the nose has a special lift that leads to a light and lean palate. Silky smooth with texture and surprisingly more rich and velvety than upon first sip.

Varietal: 100% Chardonnay

Taste: Caramelized pineapple, hazelnut, citrus, pear tart, and layers of complex Chardonnay fruit all flow to a beautifully pure, silky, balanced wine that has depth, freshness, complexity, and length.

Only 125 cases produced.

Pairing Suggestion: Pairs well with chicken pot-pie given its body and lean palate. Also complements pesto-centric dishes & pastas.

Modus Operandi Vicarious

Red Blend 2019

Napa Valley, CA

$69 btl/retail

This blend is supple, simple and approachable, with fruity red berry and cherry and richer undertones of cola and baking spice. The ripeness is high and intense on the palate.

Varietal: 43% Merlot, 38% Syrah, 11% Cabernet Sauvignon, 8% Malbec. Triple sorted down to the berry, fermented in both small open top fermenters and new French oak barrels, and matured in 65% new French Oak for 22 months.

Taste: Black violet color. Aromas and flavors of plum butter, cola, berry preserves, toffee, hazelnut-maple creme, and honeyed nuts. Chewy, vibrant, dry-yet-fruity medium-full body and a smooth, intricate, medium-long finish with moderate oak flavor. A bold and balanced Napa red blend that offers piles of flavor!

Pairing Suggestions: Does well with grilled hamburgers, and/or portabella mushrooms. Can stand up to tomato based dishes.

Modus Operandi Vicarious

Cabernet Sauvignon 2018

Napa Valley, CA

$79 btl/retail

Another J. Moore Cab that over-delivers... Richly layered in an intense, hearty style, this wine presents dense layers of molasses and graham cracker along with a depth of black cherry and berry fruit.

Varietal: 85% Cabernet Sauvignon and 15% Merlot. Only 250 cases produced.

Taste: Deep garnet-purple in color, it soars out of the glass with notes of ripe, crushed black currants, fresh black cherries and blackberries plus suggestions of menthol, wet rocks, bouquet garni and tobacco leaf. Medium to full-bodied, the palate is chock-full of crunchy black fruit and framed by grainy tannins and bags of freshness, finishing with a lingering minty kick. 

Pairing Suggestion: Really shines with braised meats... think short-ribs or lamb shanks with polenta or porcini mushroom risotto.
