Burgundy from Chorey-lès-Beaune

It's been 314 days since we had the opportunity to do a Producer feature from Burgundy as our Weekly Tasting Flight.... that's +7,500 hours since last October for those of you keeping track at home!

 

Well- the wait is over. This week I am excited to bring back a venerable Burgundy Producer, Domaine Tollot-Beaut from Chorey-lés-Beaune, as our weekly Flight focus. 

 

As a quick geographic primer: Chorey-lès-Beaune lies on the lower slopes of the Côte de Beaune. Its near neighbors are Aloxe-Corton and Savigny-lès-Beaune.

 

With cousins Nathalie, Jean-Paul, and Olivier Tollot now in charge of the Domaine that dates back to the 1880s, I think you will be pleasantly surprised how well the Bourgognes (Blanc & Rogue) are tasting and how approachable at a young age the Chorey-lès-Beaune & Savigny-Lavières 1er Cru are.

The Tollot family represents a long lineage of winegrowers dating back to the late 1880s when François Tollot began planting vineyards in Chorey-lès-Beaune. His son, Alexandre Tollot, continued in his father’s footsteps and married Aurélie Beaut. In 1921, Tollot-Beaut became one of the first to bottle their wines under the domaine and started exporting their wines to the U.S. shortly thereafter. Today, cousins Nathalie, Jean-Paul, and Olivier Tollot are in charge. The wines of Tollot-Beaut are well-known for their serious but pleasing style across a range of appellations from Bourgogne to Grand Cru. 

 

Location of Vineyard

Chorey-lès-Beaune lies on the plains below the Côte d'Or escarpment with 136 hectares almost exclusively planted with Pinot Noir. Nearly half of Chorey-lès-Beaune is sold as Côte de Beaune-Villages. Initially, the Tollot family owned vines only in Chorey, but successive generations made small acquisitions in Savigny, Aloxe, and Beaune for a current total of 60 acres. They are the proud owners of two monopoles, Savigny-lès-Beaune Champs-Chevrey and the more recently acquired Chorey-lès-Beaune Pièce du Chapitre. Tollot-Beaut farms lutte raisonée (“reasoned struggle”) and maintains a high proportion of old vines from the highly prized Pinot Fin strain.

 

Winemaking Philosophy

The Tollot-Beaut cellar is in the center of Chorey-lès-Beaune on the rue Alexandre Tollot, named after Nathalie’s great grandfather who was once the Mayor of Chorey. Parts of the meticulously kept cellar are over 250 years old. Chardonnay is pressed pneumatically and starts fermentation in stainless-steel tanks before finishing alcoholic and malolactic fermentation in barrel. Pinot Noir is almost entirely de-stemmed. The wines of Tollot-Beaut were once made with more new oak but in recent years the oak influence has become subtler. Village and regional wines receive about 20% new oak while the Grand Crus receive about 60% new oak.

Less than 4% of Chorey-lès-Beaune is planted to Chardonnay. Tollot-Beaut has a small plot within the village which is classed as Bourgogne Blanc with vines that were planted in 1956, 1962, 1986, and 2001. Tollot-Beaut’s Bourgogne Blanc shows the density and concentration expected of old vines with richness and texture on the palate balanced by bright acidity.  

 

 

Varietal: 100% Chardonnay. Aged for 12 months in 25% new French oak.

 

Taste: The nose shows yellow apples, lemon, and white flowers with salty mineral notes and a hint of toasted brioche. On the palate it burst with guava and a delicate top note of hazelnut and orange peel. Lively freshness on the finish, and a good long aftertaste

Bourgogne Rouge 2020

Chorey-lès-Beaune lies on the plains below the Cote d'Or escarpment with 336 acres almost exclusively planted with Pinot Noir. The Tollot family represents a long lineage of winegrowers dating back to the late 1880s when François Tollot began planting vines. This Rouge's high acidity, medium body, and low tannins make it very food-friendly.

 

 

Varietal: 100% Pinot Noir. The wine is fermented in open vats with floating caps that are punched down daily. The wine is aged in French oak barrels, 25% of which are new oak.

 

Taste: The wine shows a delicate profile on the nose with aromas of red flowers, cherries, and sweet herbs. The palate shows the rusticity of the appellation but with unexpected richness and texture that brings warm notes of vanilla and spice. This has a soft, round mouth-feel, complemented by the bold richness of a warmer vintage which suits the Bourgogne rouge style perfectly. A lovely example of Côte de Beaune Pinot fruit

Chorey Les Beaune Rouge 2020

Tollot-Beaut is proud of their village and produces this classic Pinot Noir example from vines planted in the 90s. This Chorey Lès Beaune is bright and perfumed with red cherries and slightly coarse tannins. This is a classic rustic red wine.

 

 

Varietal: 100% Pinot Noir. The wine spends 18 months in 25% new Burgundian pièce.

 

Taste: Black/purple in the glass with concentrated dark raspberry that's less stewed than the Bourgogne Rouge. Sun-dried cherry notes are evident with faint hint of juniper that lead to refreshing balanced mineral finish.

Savigny Lavières 1er Cru 2020

Les Lavières is named after a flat piece of stone called “lave.” This is one of Savigny’s best 1er Crus despite its northeastern exposure. Savigny sits in a small east-west valley perpendicular to the Côte. Vineyards on the Beaune side tend to give more richness and concentration whereas vineyards on the Pernand side (where Les Lavières is located) tend towards delicacy and perfume.

 

 

Varietal: 100% Pinot Noir. Aged in French oak- 30% new.

 

Taste: Savigny-lès-Beaune Les Lavières is soft, supple, and delicately scented with strawberry & ripe raspberry aromas and flavors and an underpinning of minerality. Subtle notes of vanilla and spice on a noticeably longer finish than other vintages . Les Lavières can mature early and offers excellent near-term drinking.
