Description
Varietal: made from the Melon de Bourgogne grape, which is typically used to produce Muscadet wines in the Loire Valley. However, in this case, the grapes are sourced from the limestone-rich soils of the Chalone AVA in Monterey County. Whole cluster pressed to concrete eggs where it underwent spontaneous fermentation.
Taste: Pale yellow with a slight greenish hue in the glass. On the nose, the wine has aromas of green apple, citrus, and wet stone. On the palate, the wine is crisp and refreshing, with flavors of lemon verbena, lime, and a hint of salinity. The wine has mouthwatering acidity and a long, mineral-driven chalky oyster shell finish.
