Domaine André et Mireille Tissot Crémant du Jura NV
Varietal: 50% Chardonnay, 40% Pinot Noir, 5% each of Poulsard & Trousseau (native varietals to Jura). Fermented in stainless steel, and ages on lees for 4 months- during which time malolactic fermentation takes place. Aged on slats for 18 months. Dosage of 2g/L.
Taste: Deep, effervescent gold with a fine bead in the glass. A nose of white flowers, raw honey and apple/pear invites a tasting that opens to a full experience of tangy light orchard fruit, a dusting of pollen and white pepper on the dry, full palate. Persistent finish.
