'21 produced a healthy crop from all of LIOCO's Chardonnay sites, and therefore this vintage was treated like the Bourgogne Blancs that inspired it. 20 months of total time in tank resulted in the most complex, layered version we have seen in years.

Description
Varietal: Chardonnay. Hand-harvested, and destemmed prior to being pressed. The majority of the juice was fermented in stainless steel tanks, and the balance in neutral oak puncheons, where they remained (with no battonage) for 6 months before racking.
Taste: Aromatic profile has notes of chamomile, rock salt & kiwi. Flavors are a little more straight forward with pear skin, limestone & lemon verbena front and center.
