Patrick Piuze's Val de Mer is a Brut Non Dosé from Burgundy that utilizes 25 year old Chardonnay vines to make as refreshing and racy Sparkling wine as you can get outside of Champagne.

Description
Varietal: 100% Chardonnay. All the grapes are hand-harvested, and it is fermented and aged in stainless steel tanks before undergoing secondary fermentation. It then spends 9 months on the lees before it is disgorged and no dosage is added.
Taste: Dry with ripe apple fruit and a soft feel on the palate. The bubbles are very fine and acidity excellent. There's a toasty element from time spent on the lees, and a velvety quality both elegant and enticing.
