Winemaking
“L-O” is made with a deliberately slow, cool approach to preserve aromatic detail while building texture: neutral yeasts, cool temperatures toward the end of fermentation to slow yeast activity, and a long fermentation period (around five weeks). Daily stirring during fermentation followed by extended aging on fine lees helps create a richer mouthfeel and added complexity.

Domaine Michel Vattan is a family-run Sancerre estate based in Maimbray (a hamlet of Sury-en-Vaux), northwest of the town of Sancerre. The domaine traces its roots to 1930, growing from a small mixed farm into a focused vineyard estate of roughly 9–10 hectares.
