Winemaking
Gemischter Satz refers to multiple grape varieties planted together in a single vineyard, harvested at the same time, and fermented as one lot. The fruit is selectively hand-harvested in October in multiple passes.
The grapes undergo approximately 10 hours of skin maceration before gentle pressing. Fermentation occurs with vineyard yeasts, and the wine is aged on the full lees in stainless steel. The brief skin contact adds subtle structure, while lees aging builds mid-palate texture without softening the natural tension from the calcareous soils.
Petit Perspective: The lees are present but controlled. They add weight without muting the wine’s linear acidity, which keeps the finish focused and clean.
Serving & Pairing
Serve chilled but not ice cold. Excellent with roast chicken, schnitzel, vegetable tarts, fresh cheeses, or herb-driven dishes. Its acidity and texture make it especially versatile at the table.
