Description

Classic Chablis in its truest form: taut, bright, and unmistakably stony. Expect green apple, ripe pear, and white floral notes on the nose, with that signature streak of chalk and wet limestone that makes this region unlike anywhere else in Burgundy. The palate is medium-bodied with vivid acidity and a clean, mineral-driven finish. No oak. No distractions. Just Chablis doing exactly what Chablis does best.

Why We Love It

The Marcel label is not Domaine Servin's standard range. Francois Servin only bottles these wines under his father Marcel's name when they turn out perfectly, making them extremely limited and exclusive, available only through select personal channels. Francois has been rated among the top two winemakers out of 120 in all of Chablis by Burgundy's trade press, and his personal cuvees reflect that standard. This is textbook Chablis in the best possible sense -- and then a little more.


Winemaking

Francois Servin farms just nine acres of vines on Chablis's celebrated Kimmeridgian marl soils, the ancient seabed limestone-clay that gives this corner of Burgundy its haunting mineral character. The wine is made without oak, preserving the purity of fruit and the terroir-driven stoniness that defines the appellation at its most compelling. The Servin family's roots in Chablis trace back to 1652, and Francois uses old-world traditions alongside modern technique -- his view being that the winemaker matters more than the barrel maker.


Serving & Pairing

Serve at 48-52F. A natural with oysters, littleneck clams, ceviche, or any simply prepared white fish. Works beautifully with goat cheese, roast chicken, or wherever you'd reach for a squeeze of lemon.


Estate Overview

The region of Chablis sits in the northwestern corner of Burgundy, closer in spirit and geography to Champagne than to the Cote d'Or. Domaine Servin's estate wines are widely available, but the Marcel-label wines represent something more personal: Francois's own selections, released only in excellent years, through a handful of trusted partners. Finding them in North Carolina is genuinely rare.
