Winemaking

Waris-Larmandier is a small grower-producer house based in Avize, at the heart of the Côte des Blancs, with a philosophy rooted in expressing the distinct character of their village parcels rather than chasing a uniform house style. Their approach leans toward minimal intervention in the cellar, allowing the chalky terroir of their vineyards to speak as clearly as possible in the finished wine. The "Racines de Trois" — roots of three — reflects their commitment to blending all three classic Champagne varieties in a way that honors place above all else.

Tasting Notes

On the nose, this Champagne opens with a lovely interplay of green apple, warm brioche, and a cool, stony minerality, with a whisper of white blossom lifting the whole thing gracefully. The palate follows through with real elegance — fine, persistent bubbles carry flavors of lemon curd, white peach, and a touch of toasted hazelnut, all wrapped in a gently creamy texture that keeps it from feeling austere. The finish lingers with a characteristic saline quality that is the hallmark of great Champagne, clean and refreshing right to the end. This is a wine with genuine structure and tension, and while it drinks beautifully now, it will reward patience through the early 2030s.

Producer

Waris-Larmandier is a small family domaine farming their own vineyards across several Grand Cru and Premier Cru sites in the Côte des Blancs, with Avize as their home base. As a récoltant-manipulant — a grower who makes their own wine from their own fruit — they represent the kind of terroir-driven, small-scale production that has made the grower Champagne movement so compelling for wine lovers seeking alternatives to the large négociant houses. Their estate-grown approach means full control from vine to bottle, and the wines consistently reflect the specificity of their land rather than a blended, market-driven style.

Terroir

Avize sits squarely within the Côte des Blancs, the south-facing escarpment southeast of Épernay that is one of Champagne's most revered growing zones and the spiritual home of Chardonnay in the region. The soils here are predominantly pure Belemnite chalk — the same ancient marine limestone that runs beneath the greatest Champagne vineyards — which drains exceptionally well while retaining just enough moisture to sustain the vines through dry summers. This chalk is the direct source of that signature saline, electric minerality you find in wines from this part of Champagne, a quality no amount of winemaking technique can manufacture without it.

Food Pairings

The wine's creamy texture and bright citrus backbone make it a natural match for a butter-poached lobster tail with tarragon, where the richness of the dish is cut cleanly by the Champagne's acidity and saline finish. For something more casual, a spread of oysters on the half shell with a simple mignonette is a near-perfect pairing — the brine of the oysters echoes that minerality in the most satisfying way. If you're looking for a composed dinner option, try it alongside a pan-seared halibut with a lemon beurre blanc and a handful of fresh herbs.
