Winemaking
Grapes are harvested from certified organic vines. Fermentation takes place with native yeasts over approximately eight weeks in stainless steel tanks. The wine is aged sur lie for added texture and complexity before bottling under a Stevlin screwcap closure. No added sulfites beyond the minimal levels used at bottling.
Serving and Pairing
Serve at 50 to 54 degrees Fahrenheit. The wine's dry mineral profile and lively acidity make it a natural pairing for chicken, seafood, and Asian-inspired cuisine. Estate Overview
The Prüm family's roots in the Mosel date to 1156, making them one of the oldest documented winemaking dynasties in the world. S.A. Prüm was formally established in 1911 by Sebastian Alois Prüm and has been shaped in its modern form by Raimund "The Red" Prüm, who took over in 1971 and expanded the estate from 3.5 to 30 hectares. In 2017, Raimund's daughter Saskia assumed full ownership, becoming the first woman to lead the estate in its history. S.A. Prüm is a founding member of the VDP, Germany's association of premium wine estates, and farms all vineyards with organic methods. Their holdings in the Wehlener Sonnenuhr, Graacher Domprobst, and Bernkasteler sites represent some of the Mosel's most storied terroir.
