Winemaking

Made using traditional méthode champenoise, the wine undergoes a secondary fermentation in the bottle and spends time on the lees, building the toast and complexity you find in the finish.

Serve chilled between 45 and 50 degrees Fahrenheit; no decanting needed. It is at home as an aperitif on its own, with oysters and raw shellfish, or alongside a simple butter-poached fish. The acidity and mineral thread cut through richness without demanding food, so it works equally well with smoked salmon or soft cheese.
