Winemaking

Grapes are hand-harvested from high-altitude vineyards (~650 m) planted in slate, quartzite, and clay soils. Fermentation occurs with native yeasts in neutral vessels, and the wine sees a brief aging in a mix of amphorae and neutral oak. The approach is minimal-intervention, letting the vineyard and its old vines shine in every glass.


Serving & Pairing

Serve slightly cool (~60-62°F) or decanted briefly to allow aromatics to open. Pairs beautifully with grilled lamb chops, wild mushrooms with herbs, or simply a board of aged Manchego and Marcona almonds.


Drinking Window

Best enjoyed from 2025 through 2030+, though its bright fruit and acidity make it enjoyable now with a little air.
