Winemaking

Champagne Ayala is led by cellar master Caroline Latrive, who has shaped the house's distinctly Chardonnay-driven style since taking the reins. Her approach favors freshness and precision over richness, deliberately keeping dosage low to let the wine's natural acidity and terroir expression take center stage. The Brut Majeur is her signature statement — a non-vintage blend built for elegance rather than power.

Tasting Notes

The nose opens with inviting aromas of green apple and lemon curd, layered with the subtle warmth of fresh brioche and a whisper of toasted hazelnut. On the palate, fine, persistent bubbles carry flavors of white peach and lemon zest across a crisp, well-structured frame — a reflection of the house's Chardonnay-forward blending philosophy. There's a delicate minerality threading through the mid-palate that keeps everything feeling lifted and alive. The finish is clean, dry, and satisfyingly long without any sense of heaviness.

Producer

Founded in 1854 in Aÿ by Edmond de Ayala, the house has operated from its historic cellars in one of Champagne's most prized villages for over 170 years. Ayala was acquired by the Bollinger group in 2005, an affiliation that brought investment and renewed focus while allowing the house to maintain its own distinct identity and style. Relatively modest in scale compared to the grandes maisons, Ayala has leaned into that independence to cultivate a reputation for low-dosage, Chardonnay-led Champagnes that punch well above their price point.

Terroir

The house draws fruit from across the Champagne appellation, with particular emphasis on the Vallée de la Marne and the Côte des Blancs — regions whose chalky limestone and cool continental climate are the foundation of Champagne's signature tension between ripeness and acidity. The village of Aÿ itself sits at the heart of the Montagne de Reims, classified as a Grand Cru, where deep chalk subsoils provide excellent drainage and a natural mineral character that shows clearly in the glass. This geographic diversity in sourcing gives the Brut Majeur its complexity and consistency across vintages.

The wine's bright acidity and citrus-driven profile make it a natural match for a classic oysters Rockefeller or a simple platter of freshly shucked oysters with mignonette.
