Winemaking
Missing Thorn begins as a fully fermented Albariño wine, selected specifically for its acidity, aromatics, and resilience through dealcoholization. Alcohol is gently removed using a low-temperature vacuum distillation process, preserving natural aromas and flavors. The wine is then adjusted for balance and undergoes a secondary fermentation in pressurized tanks to create fine, Champagne-style bubbles — resulting in freshness, finesse, and complexity without alcohol.
