Winemaking
Missing Thorn White begins as a fully fermented Albariño wine, gently whole-cluster pressed and fermented in stainless steel with no malolactic fermentation or oak influence. Alcohol is carefully removed using a low-temperature vacuum distillation process designed to preserve the wine’s natural aromas and flavors. The wine is then balanced to maintain freshness, structure, and varietal character without alcohol.
