Description
Varietal: 100% Pinot Noir. Typically the fruit is destemmed into small fermenters, but sometimes, it is added as whole clusters. The wine is then punched down by hand, or gently pumped over until the fermentation is complete. We then collect the free run and press juice in barrel for a long, slow maturation until the wine is ready to be bottled.
Taste: Ruby red & burgundy in the glass, this wine is fruity with black raspberry, baking spices, elderberry syrup, rhubarb, and red licorices. The palate is velvety and boasts an explosion of blackberries on the finish along with hints tobacco, cherry cola, and spice.
