Winemaking

Domaine Costal is a collaboration between Domaine Jean Collet and Kermit Lynch, created for the American market with specific attention to vinification and bottling choices. Romain Collet handles the winemaking, drawing on a family Chablis estate with established vineyard holdings. Les Truffières gives the label a more specific site expression than a basic regional Chardonnay. Petit Philippe selected Les Truffières because it gives customers Chablis clarity with a grower-driven story behind it.
Terroir (Place)
Les Truffières is a 1.26-hectare vineyard with vines around 20 years old. The small vineyard source gives the wine a more focused profile than a broader village blend. Chablis’ limestone-rich soils contribute the stony aroma, citrus tension, and saline finish that define the wine.
