Description
Chardonnay is planted across the globe, but nowhere does it speak as distinctly -- or as differently from itself -- as it does in Burgundy. This three-bottle collection traces the grape across three of the region's most compelling appellations, from the razor-sharp minerality of Chablis in the north to the lush, old-vine richness of the Maconnais, to the precise, floral elegance of the Cote de Beaune. Same grape. Wildly different wines. That's the point.

The Experience
Most people think of white Burgundy as a single thing. This collection makes the case that it's three very different things -- unified by a common grape and a shared commitment to letting the land speak.
Start with the Marcel Servin Chablis, the most northerly of the three. Chablis sits closer to Champagne than to Beaune, and the wines reflect that -- stony, cool, taut, and built around limestone minerality rather than fruit weight. No oak. Just Chardonnay and Kimmeridgian rock. It's the purest expression of the grape in the entire region.
Move to the André Bonhomme Viré-Clessé from the Maconnais, where the climate is warmer and the vines are old -- between 70 and 95 years. The wine is rounder, more generous, with orchard fruit, honeycomb, and a creamy texture that still carries real mineral lift. This is southern Burgundy punching well above its weight class.
Finish with the Rapet Pernand-Vergelesses Les Combottes from the Cote de Beaune, the heartland of white Burgundy. Rapet has been farming this village since 1765. The Les Combottes is fresh, precise, and layered -- white fruit, delicate spice, a stony minerality that builds on the palate, and a finish with real length. This is where Chardonnay and place become genuinely inseparable.

Rich and textured with white peach, honeycomb, and a saline mineral thread. Sourced from organically farmed vines between 70 and 95 years old. Southern Burgundy at its most serious.

Why We're Excited
2023 is shaping up to be one of the finest recent vintages for white Burgundy -- and this collection landed at exactly the right moment. Each of these producers represents the best of their respective appellation, and none of them are household names yet in the US market. The Servin Marcel label is intentionally limited and only bottled in exceptional years. Bonhomme is one of the founding estates of the Viré-Clessé appellation. Rapet has been at the top of Pernand-Vergelesses for two and a half centuries. This is the kind of lineup that earns its place on the table.
Serving & Pairing
Serve all three bottles between 48-54F. As a tasting flight, pour in order from Chablis to Maconnais to Cote de Beaune -- lightest to richest, most mineral to most textured. As standalone bottles, all three are excellent with seafood, roast poultry, creamy pasta, and soft to semi-soft cheeses.
