Description
Ulli Stein’s Rosé Trocken offers a different expression of summer rosé. It is dry, light, and refreshing, with bright red fruit, citrus, herbs, and the cool, stony edge that gives it a clear Mosel identity. It's unexpected enough to feel like a discovery, but immediately easy to enjoy.

- Variety: 80% Pinot Noir, 20% Cabernet Sauvignon and Merlot
- Style: Bone-dry, high-acid cool-climate rosé
- Best For: pool afternoons, summer weekends, aperitif, crisp-rosé drinkers
- ABV: 11.5%
Why It’s a Petit Pick
Ulli Stein’s Blauschiefer Riesling earned a place in our Top 10 last year, so this is a producer we already know and trust.
We believed German rosé was a discovery worth sharing, and we took the state’s full allocation before a sample arrived. The wine delivered exactly what we hoped: refreshing, distinctive, completely dry, and immediately easy to enjoy.
Once the 2025 vintage is gone, there is no additional inventory behind it.
Tasting Profile
Juicy and vivid at first, then pulled taut by sharp acidity and a dry, mouthwatering finish.
- Aroma: Icy watermelon, tart cherry, lemon zest, fresh herbs
- Palate (Flavor): Red berries, watermelon, citrus, light slate minerality
- Structure & Finish (Mouthfeel): Light body, high acidity, juicy entry, completely dry and stony finish
Winemaking
The grapes are harvested by hand and the wine is made through a combination of direct pressing and saignée.
Direct pressing helps preserve freshness and pale color, while the saignée portion adds fruit, shape, and a little more depth. Fermentation begins with native yeasts, and the wine is aged entirely in stainless steel with no oak. It is not fined.
The result is one of the Mosel’s few still rosés: bright, rigorous, and built around acidity rather than weight.
Serving & Pairing
Serve at 45 to 48°F.
Pair with fried chicken, seafood, crunchy salads, salty snacks, roast white meats, or fresh vegetables. Its bright acidity cuts through fried or salty foods, while the red fruit keeps it easy to enjoy on its own.
Perfect For: pool afternoons, friends dropping by, weekends away, opening a summer evening, keeping a few cold, Provence rosé drinkers ready for something different
Estate Overview
Dr. Ulrich “Ulli” Stein is one of the Mosel’s most independent growers. He farms steep vineyards, works organically, and has been a vocal advocate for preserving the region’s historic vines and difficult-to-farm slopes.
His wines are shaped less by a house style than by a preference for lightness, acidity, and clear site expression. Stein is best known for Riesling, but the rosé has developed its own following as one of the estate’s most unexpected bottles.
Terroir (Place)
The fruit comes from steep, slate-rich Mosel vineyards, including warmer lower slopes where red grapes can reach ripeness while retaining the region’s natural acidity.
Slate stores warmth during the growing season and contributes to the wine’s stony, mineral edge. The cool climate keeps the fruit vivid and the finish light, dry, and energetic.
